Chili Pepper Destemming Machine
เครื่องเด็ดก้านพริก
An automatic, continuous destemming machine for red Jinda chili that combines mechanics, pneumatics, electrics and image processing. A camera sees which way each stem points, air jets put the fruit in position, and a puller mechanism removes the stem together with the calyx, bruising the fruit less than hand destemming.

The problem
Almost every chili product needs the stem removed first, and that is still done by hand. Existing machines fall short for commercial use: the calyx has to come off with the stem, the fruit must not be damaged, and the machine has to run continuously on its own.
What we built
DMIC designed the machine and the destemming mechanism, built the circuits, wrote the control program and made the image-processing system that reads each chili's orientation. The machine works in three stages: placing fruit into slots on a speed-controlled belt, sorting and grouping with a camera and air jets so every stem points the same way, and destemming on a wheel of 20 cam-driven pullers. Pneumatics, electrics, mechanics and vision run in one timed sequence.
Outcome
- 79.70% of stems removed to the 'good' grade, against 52.95% by hand
- 4.75% of fruit damaged, against 32.28% by hand
- Bruise check five days after destemming: 13 bruised out of 944 fruit
- Runs continuously at 3 fruit per second
- A research prototype; throughput is still being raised for commercial use
